We opened with a piano nobody could tune and a shelf of bottles we were proud of. The piano got better; the shelf got taller. Twenty years on, the idea is unchanged — a room where the band is close, the ice is clear, and nobody rushes you. Come early for a quiet stirred drink; stay late for the encore.
